    🍴Ingredient Notes

    Chocolate chips, medjool dates, shredded coconut, and almonds in small bowls.
    • Medjool Dates - I love Natural Delights dates - they have the option to purchase pitted or you can pit them yourself.
    • Dark Chocolate - You can also swap for 100% chocolate chips to cut down on sugar. I love the brands Hu Kitchen and Pascha for vegan & soy-free dark chocolate.
    • Raw Almonds - Feel free to swap for any nuts you have on hand! (Peanuts, cashews, walnuts, pecans etc.)
    • Shredded Coconut - Finely shredded coconut works best with this recipe.

    🍴Step by Step Instructions

    Step 1: Pitting Dates

    Start by cutting down the middle of each date. (The long way.) Remove the pit and place on a parchment paper lined plate or baking sheet.

    Step 2: Stuffing Dates

    Next, stuff each date with raw almonds. (Or any nut!)

    Step 3: Dip Dates in Chocolate

    Melt dark chocolate in the microwave in 20 second increments until it is melted.

    Finally, dip stuffed dates in dark chocolate and sprinkle with shredded coconut.
    Place dates on parchment paper and place in the refrigerator or freezer to set.

    Expert Tips

    • If you don't want to completely cover the dates in chocolate, you could always drizzle it on top instead of dipping them.
    • Place stuffed dates on a parchment paper lined plate or baking sheet for easy clean up. Once they're chilled, remove and add to storage container.
    • Let chocolate dry for about 30 seconds before adding shredded coconut or it will absorb into the chocolate.
