    This recipe is not only gluten-free and dairy-free, but also low carb, making it a healthy option for those with dietary restrictions or anyone looking to enjoy a lighter meal.

    It's a no-fuss dish you can enjoy any day of the week, and it's sure to become a family favorite!

    🍴Ingredient Notes

    Ingredients measured out for one pan balsamic chicken.
    • Chicken Breast - To prevent the chicken breast from overcooking and becoming dry, use thick cut chicken breast. Three chicken breasts should fit perfectly in a 12" cast iron skillet.
    • Green Beans - You can leave the green beans whole or cut into smaller bite sized pieces.
    • Cherry Tomatoes - Any smaller variety of tomatoes will work like cherry tomatoes or grape tomatoes.
    • Fresh Basil - I love cooking with fresh herbs, but you can always swap for about 1 teaspoon of dried basil or Italian seasoning.
    • Garlic - You can use pre-minced garlic to save time or swap for about ½ teaspoon of garlic powder.
    • Balsamic Vinegar - Do not use a balsamic glaze, just regular balsamic vinegar works best for this recipe.
    • Olive Oil
    • Salt & Black Pepper

    Recipe Variations

    • Try swapping the chicken breast for chicken thighs.
    • Add about 1-2 tablespoons of fresh lemon juice into the balsamic vinegar mixture.
    • Easily turn this into a sheet pan dinner by mixing the chicken breast and vegetables with the balsamic dressing in a large bowl then bake on a parchment paper lined baking sheet at 350 degrees for about 30 minutes or until the chicken is cooked through.
    • Skip the bowl, just spray the skillet with a nonstick spray before adding in the chicken. (I use Primal Kitchen Avocado Oil Spray!) Then sprinkle the chicken with salt, pepper, and garlic powder as it's cooking.
    • This dish would pair well with regular or dairy-free mozzarella. Add on top before baking.

    🍴Step by Step Instructions

    Step 1: Season Chicken

    Start by adding the chicken breast into a large bowl with garlic powder, black pepper, salt, and olive oil. Mix until chicken is evenly coated.

    Step 2: Brown Chicken

    Preheat the cast iron skillet to medium-high heat. Cook the chicken breast for about 4-5 minutes on each side.

    Step 3: Balsamic Dressing

    While the chicken is cooking, prepare the simple balsamic dressing by adding fresh basil, balsamic vinegar, olive oil, minced garlic, salt, and black pepper into a small bowl.

    Whisk together with a fork or small whisk.

    Step 4: Baking

    Finally, add the green beans, tomatoes, and dressing to the cast iron skillet with the chicken.

    Bake at 350 degrees for about 20-30 minutes. (Or until green beans are tender!)

    Expert Tips

    • By browning the chicken on the stovetop, it will give it a better flavor and require less cooking time in the oven.
    • Do not overcook the chicken, bake at 350 degrees for about 20-30 minutes. Use a meat thermometer to check if the chicken is done.
    • I suggest using a cast iron skillet so you can cook on the stovetop and then place it straight into the oven. If you don't have a cast iron skillet, you can also transfer the chicken and veggies into a ceramic baking dish.
    • Make sure the skillet is preheated before adding in the chicken breast.

    Serving Suggestions

    Because this is a lighter dish, it will pair well with roasted baby potatoes, mashed potatoes, cauliflower rice, brown rice, quinoa, or even gluten-free pasta!

    You can also serve with a simple side salad with balsamic dressing and spring mix or arugula.

    Garnish with fresh parsley, basil, or lemon slices.

    How to store leftovers

    Leftovers should be stored in an airtight container in the refrigerator for 3-4 days.

    You can also freeze leftovers in a freezer safe container for up to 3 months!

    • 1+½ Pounds Chicken Breast
    • 1 Tablespoon Olive Oil

    • 3-4 Cups Green Beans
    • 1+½ Cups Cherry Tomatoes
