    Avocado Lime Pudding has a light and creamy texture with a delicious zesty flavor! It's made with only a few healthy ingredients like full fat coconut milk, fresh lime juice, and avocado. It's Vegan, Dairy-Free, and can easily be made sugar-free!

    Why You'll Love This Recipe

    Satisfy your sweet tooth with this delicious and healthy recipe! It may sound odd to use avocado in dessert, but I promise there is not even a trace of avocado flavor.

    The avocado gives this recipe a rich, creamy texture and a vibrant green color. (Not to mention all of the health benefits!)

    Avocado pudding is one of my favorite things to make in the summer. It's so flavorful and has a silky-smooth texture that just melts in your mouth.

    Healthy

    The best part about this avocado pudding is that you can trick picky eaters into eating something secretly healthy! Avocado pudding is made with good fats from the avocado and full fat coconut milk.

    It's also naturally sweetened with coconut sugar, but you can use Lakanto Golden Monkfruit for a sugar-free version.

    Easy

    If you're looking for something simple and easy to make, this is the perfect recipe to try! All you need is a few ingredients and a high-speed blender.

    🍴Ingredient Notes

    • Full Fat Coconut Milk - I use the brand "Native Forest." Make sure it's full fat, and not regular coconut milk. This helps to thicken the pudding!
    • Mashed Avocado - I love using avocado in my desserts! It adds a nice creamy consistency, and a beautiful green color. You'll need about 1 + ½ avocados for this recipe.
    • Fresh Lime Juice - Fresh squeezed is best for this recipe! You'll need about 3-4 limes for this recipe. To save time, use Santa Cruz Organic Lime Juice.
    • Coconut Sugar - Any granulated sugar will work. You can sub with Lakanto Monkfruit for a sugar-free alternative.
    • Lime Zest - I add a little into the pudding for flavor, and I always save some to sprinkle on top as a garnish!

    🍴Step by Step Instructions

    Step 1: Blend Ingredients

    Start by adding coconut milk, avocado, lime juice, lime zest, coconut sugar, and vanilla extract into a food processor or blender. Blend on high until it becomes a smooth, creamy consistency.

    Step 2: Pour Into Cups

    Next, pour into small cups, or mini mason jars. Optional - top with extra lime zest!

    Step 3: Refrigerate

    Place them in the refrigerator to chill for at least 4 hours before enjoying! (Preferably overnight.) This will allow the flavors to blend, and the pudding to thicken up. Enjoy!!

    Expert Tips

    • For best results, use ripe avocados for this recipe! Unripe avocados are not as soft and creamy which will alter the texture of the final product.
    • I recommend using a high speed blender like a Vitamix for this recipe. You can use a food processor, but it will not come out as smooth.
    • The pudding needs to chill in the refrigerator for at least 1 hour. As it sets, the texture and flavor get even better!
    • Layer the lime pudding with my Gluten-Free Vanilla Cake to make a "key lime pie trifle."

    Do I need ripe avocados to make this recipe?

    Yes! Unripe avocados have a hard texture and will not yield a creamy pudding. You'll know they're ready when you can squeeze the outside and they feel a little soft!

    Can I make this recipe Keto?

    Yes! Just swap the coconut sugar for Lakanto Golden Monkfruit or any sugar-free granulated sugar.

    What size cups do you recommend for this recipe?

    Since the pudding is very rich, I like serving mine in 4 ounce mason jars! The ones I have come with covers so you can easily store them in the refrigerator.

    Can I use Key Limes instead?

    Yes, regular lime or key lime will work with this recipe.

    Topping Ideas

    • Fresh Strawberries - Any fresh berries would be delicious on top!
    • Extra Lime Zest
    • Coconut Whipped Cream - This will give the recipe more of a key lime pie taste!
    • Chopped Walnuts or Macadamia Nuts - For a little crunch!
    • Shredded Coconut
    • White Chocolate Chips
    • Crushed Gluten-Free Lemon Cookies or Shortbread Cookies

    How to store leftovers

    Store leftover pudding in the refrigerator. If you have leftovers they will last a few days in the fridge, just make sure to cover them with plastic wrap or a reusable cover.
