    Easy Creamy Coffee Popsicle Recipe (Dairy Free)

    If you're a coffee lover like me, you have to try these Creamy Coffee Popsicles! They're the perfect treat for a hot summer day. And the best part is, you only need 4 ingredients and about ten minutes to make them!

    Why You'll Love This Recipe

    Skip the iced coffee today and try this iced coffee popsicle recipe instead! They have a super creamy texture and are made with only 4 ingredients.

    I love making popsicles at home because you can achieve similar results to store bought popsicles without all the extra additives, food dyes, and sketchy ingredients.

    Allergy Friendly

    If you're looking to satisfy your sweet tooth with a healthier treat, you'll love these homemade popsicles! This recipe is dairy-free, soy-free, gluten-free, vegan, and nut-free!

    They're also lower in sugar compared to store bought popsicles!

    Easy

    Homemade popsicles are so easy to make! Just blend all the ingredients together in a high-speed blender, pour into silicone popsicle molds, and freeze for 5-6 hours.

    Side note: The popsicle molds linked include the wooden popsicle sticks!

    🍴Ingredient Notes

    Ingredients measured out for coffee popsicles.
    • Strong Brew Black Coffee - Any black coffee will work with this recipe.
    • Full Fat Coconut Milk - Canned coconut milk has a thicker consistency compared to regular coconut milk in a carton. For this recipe you will use the entire 13.5 ounce can. (Thick part at the top & the liquid at the bottom.)
    • Sweetened Condensed Coconut Milk - This gives the ice cream bars their sweet flavor and silky texture. I used the brand Nature's Charm.
    • Vanilla Extract - A teaspoon of vanilla extract gives these coffee bars a rich flavor.

    Coffee

    For best results, I suggest using organic coffee beans. Dark roasts work great if you like a strong coffee flavor, but feel free to use any type of coffee you'd like! After you brew the coffee, place it in the refrigerator to chill.

    In my opinion, the best method to make coffee is with a French Press. It comes out great every time and you can steep it longer for a stronger brew. (A regular coffee maker works too!)

    To save time, use cold brew coffee instead! You can make it yourself or purchase it at most grocery stores.

    Chocolate

    If you're planning to dip the popsicles in chocolate, you'll need about ⅓ cup of dark chocolate chips, and 1 teaspoon of coconut oil melted together.

    Heat in 20 second increments in the microwave until it's silky smooth.

    Dip the top of the frozen ice pops in the melted chocolate and it will almost instantly harden! To prevent them from sticking, place the chocolate dipped ice cream bars on a parchment paper lined baking tray or large plate.

    My favorite dairy-free and soy-free chocolate chips are Pascha and Hu Kitchen.

    🍴Step by Step Instructions

    Step 1: Blend Ingredients

    Add the can of full fat coconut milk, strongly brewed coffee, sweetened condensed coconut milk, and vanilla extract into a high-speed blender. Blend the coconut mixture on high until it's smooth and creamy.

    Step 2: Pour into Popsicle Molds

    Pour the coconut mixture into your favorite popsicle molds.

    Step 3: Freeze Popsicles

    Add a popsicle stick into each mold and freeze for 5-6 hours or until solid.

    Step 4: Remove from Molds

    Once the popsicles are frozen, remove them from the freezer and let the mold sit on the counter for 5-10 minutes. Carefully remove each popsicle and place it in an airtight container in the freezer until you're ready to serve!

    Step 5: Dip in Melted Chocolate

    Optional, but highly recommended - dip the end of each creamy coffee bar into melted dark chocolate.

    Expert Tips

    • Run warm water on the popsicle molds to loosen them up for easy removal! You can also let them sit at room temperature for a few minutes.
    • Don't stick the wooden sticks in too far or else they will be hard to hold.
    • Save the leftover sweetened condensed milk in an airtight container in the refrigerator until you're ready to make more popsicles!
    • Make sure the popsicles are frozen solid before removing from molds. It takes about 5-6 hours to freeze.
    • If you have leftover coffee, freeze it in ice cube trays to make iced coffee! (You only need a cup of coffee for this recipe.)

    Recipe Variations

    • Completely coat the popsicles in melted chocolate and sprinkle with chopped almonds to give them a little crunch!
    • Swap the dark chocolate for white chocolate to switch up the flavor profile. (I love Pascha dairy-free white chocolate.)
    • Use a different style popsicle mold to create a new look!
    • Pour into square silicone molds to make coffee flavored "Klondike Bars." Dip the ice cream bars in melted chocolate after freezing.

    How to store leftovers

    After you remove the popsicles from the silicone mold, place in an airtight container in the freezer.
