3-Ingredient Almond Flour Cookies are soft, sweet, and only take about 15 minutes to make! This allergy friendly recipe is great for those who can't have eggs, gluten, grains, or dairy.

Instructions
Start by adding medjool dates, coconut oil, and almond flour into a food processor. If you're adding salt and vanilla extract, you can add that in now as well!
Blend for a few minutes, scraping down the edges as needed until you reach a dough like consistency. You'll notice it will clump mostly into one big ball when it's ready!
Use a cookie scoop to place 12 even sized balls to a parchment paper lined baking sheet. They will not spread much, so you'll need to press them down into a disk shape. Optional, but I like topping them with chocolate chips!
Bake the cookies at 350 degrees for about 10 minutes.

Expert Tips
For best results, I suggest using medjool dates. They're large and juicy which makes for a soft texture.
Check the inside of the dates to make sure they do not have black mold. (It's pretty common!)
Buy pitted dates to save time!
Blend the cookie dough mixture until it's a soft and sticky consistency.
Make sure you press the cookies down into a thick disc because they will not spread while baking.
