Air Fryer Chicken Kabobs are layered with a cilantro yogurt chicken, red onion, and bell peppers. This delicious summer recipe is easy to prepare and can be cooked in the air fryer or on the grill!
3-6 Metal or Wooden Skewers It depends on how long they are!
Ingredients
1+½PoundsChicken Breast
2Bell Peppers
1-2Red Onions
¼CupChopped Cilantro
¼CupPlain Coconut YogurtAny plain yogurt will work!
1TeaspoonSalt
½TeaspoonGarlic Powder
¼TeaspoonBlack Pepper
Instructions
Start by cutting chicken into small pieces. (About 2-3inches long.)
Add the chicken to a bowl with coconut yogurt, chopped cilantro, salt, garlic powder, and black pepper. Stir together until chicken is fully coated.
Place chicken in the refrigerator to chill for 30 minutes.
Next, prepare the vegetables by chopping to large two inch chunks. (Make sure you remove onion skin + white membranes from bell peppers.)
When you're ready to assemble the skewers, layer them with red onion, bell pepper, and chicken. Repeat until you have used all of the chicken and vegetables.
Air fry the kabobs at 375 degrees for about 18-20 minutes. Serve hot!
Notes
Expert Tips
If you plan to use wooden skewers, make sure you soak them in water first to avoid burning. (Especially if you grill them!)
Marinate the chicken breast the day before to allow more time for the flavors to soak in.
Cut vegetables into bite sized pieces so they cook evenly.
Separate chicken and vegetables if you're serving this dish to vegans or vegetarians.
The metal skewers get HOT. Be careful when grabbing them to remove the chicken and vegetables.
Do not overcook the skewers or the chicken will get dry. Use a meat thermometer to check that the internal temperature of the chicken is 165 degrees.
How to Store Leftovers
