Buffalo Chicken Stuffed Avocado

Ingredients
  

  • 3 Ripe Avocados
  • ¼ Cup Diced Red Onion
  • ¼ Cup Diced Bell Pepper
  • ¼ Cup Buffalo Sauce I used Primal Kitchen Dairy-Free Buffalo Sauce.
  • 1-2 Tablespoons Dairy-Free Feta

Chicken

  • 1 Large Chicken Breast Or two smaller pieces of chicken.
  • 1 Tablespoon Olive Oil
  • ½ Teaspoon Garlic Powder
  • ½ Teaspoon Paprika
  • ½ Teaspoon Salt

Instructions
 

  • Start by marinating the chicken in olive oil, paprika, salt, and garlic powder.
  • Next, cook the marinated chicken breast on a skillet, covered for about 6-8 minutes on each side on medium heat.
  • Then, remove the chicken from the skillet and add it to a small bowl. Shred the chicken with two forks.
  • Add the shredded chicken, diced bell pepper, diced red onion, and buffalo sauce into a large bowl. Mix together until combined.
  • Cut each avocado in half and remove the pit. Use a small spoon to scrape out some of the avocado to leave room for more filling. Place the extra avocado in an airtight container for later!
  • To assemble, stuff each avocado half with the chicken filling. Top with feta cheese, freshly chopped cilantro, or a drizzle of dairy-free ranch dressing! Enjoy!

Notes

Expert Tips

  • To save time, use a rotisserie chicken. Remove the meat and shred for the filling.
  • Shred the chicken using a hand mixer instead of two forks. It's much quicker and easier!
  • Use a meat thermometer to make sure the chicken has cooked through. The internal temperature should be 165 degrees.
  • Pick avocados that are about the same firmness and sizeWider avocados will have more room to stuff!
  • To save time, make the filling ahead of time and stuff the avocados before serving.
  • Don't scoop out too much of the avocado flesh! Leave a little along the edges and on the bottom. Just scoop enough out so there's more room to add the filling.

How to Store Leftovers

Store leftover stuffed avocados in an airtight container in the refrigerator for about 3-4 days.
