Grilled Teriyaki Chicken Skewers Recipe with Pineapple

Equipment

  • 1 Grill
  • 4-5 Metal Skewers

Ingredients
  

  • 1 Pound Chicken Tenders You can also use chicken breast cut into small pieces!
  • Cup Teriyaki Sauce I used Primal Kitchen Thick'n Sticky Teriyaki Sauce.
  • 1 Red Bell Pepper You can also use yellow, orange, or green bell peppers.
  • 1 Large Red Onion
  • 2 Cups Pineapple Cubes Fresh cut pineapple works best!
  • Salt & Pepper to taste.

Instructions
 

  • Start by adding the chicken tenders or chicken pieces into a small bowl. Pour in the teriyaki sauce and stir together until the chicken is completely coated. Place in the refrigerator to marinate. (About 30 minutes.)
  • Next, cut the bell pepper and red onion into similar sized pieces.
  • Then, peel and cut the pineapple into large cubes.
  • To assemble the skewers, add a piece of red onion to the bottom followed by pepper, pineapple, and finally the marinated chicken. Repeat until you fill the skewers.
  • Place the chicken kabobs on a medium-high heat grill for about 10 minutes on each side. Carefully remove the skewers from the grill and serve hot!

Notes

Helpful Recipe Tips

  • Marinate the meat overnight for maximum flavor! Cover the bowl with plastic wrap and refrigerate to keep fresh.
  • Make sure chicken is around the same size to ensure even cooking. If you use pre-cut chicken tenders, they will be around the same size already!
  • Always use a sharp knife to cut meat and vegetables! This will actually help to avoid injury.
  • Use a meat thermometer to make sure the chicken has cooked through. The internal temperature should be 165 degrees.

Grilling Tips

  • Use oven mitts or gloves to flip the kabobs and remove them from the grill.
  • For easy transfer from grill to kitchen, place the cooked kabobs on a large baking sheet or plate.
  • Use metal skewers for a safer option. If you use wooden skewers, I suggest soaking them in water for 30 minutes before adding vegetables or meat to avoid burning.
  • I used an outdoor grill for this recipe, but an indoor grill will work too! Either way, make sure the grill has been pre-heated before placing the skewers on the grill grate.

How To Store Leftovers

To store leftovers, remove the meat and vegetables from the skewers. Place in an airtight container and store in the refrigerator for up to 4 days.
