Leftover Taco Meat Pasta Recipe

If you're looking for a quick and easy recipe to use up leftover taco meat, you have to try this Dairy-Free Taco Pasta! It's hearty, flavorful, and made with simple ingredients.

Ingredients
  

  • 1 Pound Cooked Ground Beef Seasoned Taco Style
  • 28 Ounces Fire Roasted Diced Tomatoes
  • 12 Onces Gluten-Free Pasta The pasta will cook separately according to package directions. I used Jovial Gluten-Free Fusilli Pasta.
  • 3 Bell Peppers, Diced
  • 1 Red Onion, Diced
  • 1 Sweet Onion, Diced
  • 3-4 Cloves of Garlic, Minced
  • 2 Tablespoons Tomato Paste
  • 1 Tablespoon Avocado Oil You can swap for olive oil or coconut oil.

Seasoning

  • 2-3 Tablespoons Chopped Fresh Cilantro
  • 2 Teaspoons Chili Powder
  • 1 Teaspoon Salt
  • 1 Teaspoon Garlic Powder
  • 1 Teaspoon Cumin
  • ½ Teaspoon Paprika

Instructions
 

  • Start by adding the diced red onion, sweet onion, minced garlic, and bell peppers into a large pan with about a tablespoon of avocado oil. Cook on medium heat covered, stirring occasionally for about 10 minutes or until onions are translucent.
  • Next add in the cooked ground beef, fire roasted diced tomatoes, tomato paste, chopped cilantro, minced garlic, chili powder, salt, garlic powder, cumin, and paprika. Stir well and cover. Cook on medium heat for about 20-30 minutes.
  • While the sauce and meat are cooking, prepare the pasta in a separate pot. Boil water and cook according to package instructions.
  • Finally, pour the cooked pasta into the pot with the taco sauce. Stir well and serve with avocado and fresh cilantro.

Notes

Expert Tips

  • To cut the bell pepper and onion into perfect bite sized pieces, I recommend using a veggie chopper! (It also saves time!)
  • Leave the cover on the pan while the vegetables cook and the sauce simmers.
  • If you don't have a bowl of leftover taco meat, you can easily cook some ahead of time in the same pan. Just remove the cooked meat when it's done and follow the step-by-step instructions.
  • When adding gluten-free pasta into sauce, just note that it will absorb some of the liquid. I always cook my pasta a little al dente, so it doesn't get soggy.
