No-Bake Cinnamon Energy Balls

No-Bake Cinnamon Energy Balls are soft, chewy, and naturally sweetened with dates. Plus, you only need 6 simple ingredients and about 15 minutes to make them!

Equipment

  • 1 Food Processor
  • Parchment Paper

Ingredients
  

  • 1 Cup Medjool Dates, Pitted
  • 1 Cup Raw Cashews Feel free to swap for almonds, pecans, walnuts, or peanuts!
  • ½ Cup Raw Pumpkin Seeds
  • 2 Tablespoons Coconut Oil
  • 3 Teaspoons Cinnamon You can also add a little nutmeg or pumpkin spice seasoning.
  • ½ Salt

Instructions
 

  • Start by adding in all of the ingredients into a food processor. Blend and scrape down the edges every 20-30 seconds until you have a sticky dough.
  • Roll about two tablespoons of dough and roll into a ball with your hands then place on a parchment paper lined plate. Repeat until all of the nut mixture is gone.
  • Store in the refrigerator or freezer until you're ready to enjoy!

Notes

Expert Tips

  • I suggest using a food processor and not a blender for this recipe. It's easier to blend and scrape down the edges.
  • Blend the nut mixture until it's pretty smooth and sticks together easily when you press it between your fingers. They shouldn't be chunky.
  • Do not use salted nuts in this recipe. I used raw cashews, but feel free to swap for pecans, walnuts, almonds, or peanuts.
  • Make sure to use soft dates and not ones that are hard and dried out. I like storing my dates in the refrigerator to keep them fresh.
  • These little bites will get a little soft at room temperature especially in the summer, which is why I suggest storing them in the refrigerator or freezer.

How to Store Leftovers

Store leftover cinnamon energy balls in an airtight container in the refrigerator.
They are also freezer friendly! Store half of the batch in the freezer to keep them fresh for longer.
